Tasty Tuesday  | The Fixate Way 

Good morning and welcome to another moment with Shona! It is my favorite day of the week… Tasty Tuesday! Wait until you taste this delicious receipe I have for you today!

Now, who is ready to eat?! Today’s recipe may have you drooling lol! I absolutely love rice bowls! And today, I share a pineapple fried rice bowl with a healthy twist!

 

Pineapple Fried Rice Bowl: 

When cooking fried rice, you want to do it fast and over high heat. This bowl is good for one person. Let’s begin!

Ingredients: 

1 tsp extra virgin organic coconut oil

1 clove garlic, finely chopped

1 Tbsp. chopped raw peanuts

1 Tbsp. thinly slices green onions

1/4 c. cubes pineapple

1/4 c. broccoli and carrots

1 large egg

2 Tbsp. Low-sodium organic chicken broth

1 tsp. fish sauce

1 tsp. Coconut sugar

1/2 tsp. curry powder

1/4 tsp. Cornstarch (preferably GMO-free)

Brown rice (cooked)


The Sauce: 

– In a small bowl, add your low-sodium chicken broth, fish sauce, coconut sugar , curry powder, and cornstarch (helps thicken sauce)
– Now whisk ingredients

 

Directions:

– Cook brown rice in a medium pot according to box & set aside.

-Place your non-stick frying pan on stove top on high heat.

-Add your coconut oil

-Once melted. Add your garlic, peanuts & green onions & let sizzle for a minute or so.

– be sure to always keep the ingredients moving so it doesn’t burn

– Then add your cubed pineapple and broccoli & carrots

– Push your ingredients to the side of the pan and add your lightly beaten egg to the middle of your pan and scramble.

– Push Eggs to the side of pan

– Add brown rice

– Pour your sauce on top and stir until dissolved

– pour into a bowl & did in!

1/2 green

1/2 purple

1/2 red

1 yellow

1/2 orange

2 tsp oil
